pot still

1. A still used for the production of distilled spirits, consisting of a single pot to which heat is applied. Pot stills are only capable of batch distillation, meaning that the still must be refilled after each distillation run (unlike column stills, which are capable of continuous distillation and can run as long as needed). Pot stills are often used in small-batch distillation, and are known for retaining a large number of congeners (flavors and aromas) from the fermented base product, producing a characteristic “funk” in the distillate.
